I prefer erythritol which is the same as Swerve, but I buy a different brand in bulk on Amazon (Whole Earth.) If you have a problem with the *cooling* sensation, add a bit of pure stevia. Chemically it helps to negate that effect.

I make mine almost exactly as written in that recipe except that I add diced apples to the mix.

My current obsession is toasted light bread spread with a Laughing Cow cheese wedge and sugar free raspberry jam. The cheese magically becomes like a cross between cream cheese and butter with the addition of the jam...it's positively dreamy.

I ALWAYS plan my food budget for the day by adding my bedtime snack first and working around that. I have to have that to look forward to. Otherwise I get cranky and pout. :D

I do use it to bulk up meals, but heat it separately. I find that if you cook it too much (like you would making baked rice), it becomes too strongly flavored and "cabbage-y" tasting. That might be okay for some recipes though. .. :)

I like the PB Fit much better than any other brand I have gotten. OMG, that stuff is life! I put it in oatmeal all the time and use it in mug cakes a lot too. Must try the peanut butter popcorn!

Fluffy peanut butter oatmeal. Whip an egg white into a 1/3 cup serving of oatmeal while it is hot. Then stir in some PB2 you have already mixed with water (I also add a little extra Splenda). Such a delicious carb/protein snack combo...seriously good! :)

I have just gotten on the cauliflower rice train and have discovered that it is an excellent way to bulk up meals with very few calories and it has an excellent chewy texture like brown rice!

Peanut flour, oatmeal, oat fiber, yogurt, eggs, boneless- skinless chicken thighs, chicken breast, brown rice, reduced calorie spaghetti, almond-cashew milk, bananas, frozen blueberries, baby spinach, pumpkin puree, sugar free raspberry jam...this sums it up for me!

I buy the reduced calorie pasta that Kroger makes their own brand of. It has only 150 calories per 2 oz. serving versus the regular at 210. I can't tell a difference in taste and it is minimally more expensive.

I LOVE the chocolate vanilla creme ones. They went away for a long time, then they brought them back. Now they are gone again. The plain peanut butter ones rocked, but they are gone now too. :'( Back to my old standby the unfrosted strawberry.
