Always let it cool completely before putting it in the bag and then the freezer. I freeze homemade rice dishes I make in bulk all the time. I divvy into smaller portions directly after its’ cooled. I’ve never had a problem with freezing rice.

Sorry, meant to add that you put the ingredients in a mug (a tall one or wide one if you have it) and microwave it right in the mug. It will rise in the mug as its cooking in the microwave and that’s what gives it the “muffin” appearance. Flax is great but remember to drink extra water with all the extra fiber intake!
