Flaxseed Meal Recipes?

I have a lot of ground flaxseed bags in my pantry, but I have no idea of what to do with them. I'm trying to stay away from sugar and wheat so I feel a bit limited. To make things worse, I'm not the best of cooks out there. If you guys have any good and more importantly, SIMPLE, recipes that involved ground flaxseeds please do share. :)

    Toss a tablespoon or two in a smoothie, in cereal, in yogurt. Simples :)

    Mix them with eggs for an omelette.

    I sonetimes eat ground flaxseed as a supplement for Omega3 but I can't imagine it being platatable in anything except a blended protein shake, oatmeal or a baked bran or cornmeal muffin.

    How long have you had this flaxseed meal? If it's stored at room temperature, ground flaxseed has a fairly short shelf life. If it smells bad, toss it. Problem solved :)

    Flax meal is used extensively in vegan baking to replace eggs. 1 tbsp ground flax + 3 tbsp water, mix and let sit for a few minutes to form a gel = 1 "egg." It has what I consider a very slight nutty taste.

    A lot of good ideas here. Throw it in a smoothie, oatmeal, yogurt, pancake batter. If you have the seeds, you can put it in a salad or cereal.

    I also make a microwave “muffin” with it that I learned years and years ago. This is probably as creative as I have gotten with it.

    4 Tablespoon ground flax
    1 egg
    2 teaspoon cinnamon
    1 teaspoon baking powder
    1 teaspoon coconut oil
    1 teaspoon stevia/truvia/sweetener of choice
    Handleful of blueberries (or other berry or banana works)

    Mix together and put in microwave for about 1 minute (may take less or more depending on the power of your microwave). Eat while warm. Butter optional.

    You can play with the recipe to see what works for you. I started mashing banana to get the muffin extra moist and more flavorful, but I also enjoy the blueberries. It’s not a traditional “muffin” but it’s quick and easy to make and filling. I used to keep a half a dozen eggs in the fridge and bring the dry ingredients to make it on my break at work.

    I prefer milled Flax Seeds. I toss a spoon full of them in everything. Rice and Beans, Salads, Omelettes.
    But my favorite is a Mango, Pineable smoothie. Blend it all and chug it down.

    Sorry, meant to add that you put the ingredients in a mug (a tall one or wide one if you have it) and microwave it right in the mug. It will rise in the mug as its cooking in the microwave and that’s what gives it the “muffin” appearance.

    Flax is great but remember to drink extra water with all the extra fiber intake!
