your wife is a bad wife bc she is purposefully sabotaging your diet. you need to tell her if she brings in junk food , hide it somewhere with a lock where only she can get it. she should be working with you.

If I eat salt my weight goes up bc of the water retention. Ratings heavy foods like red meat make my weight go up. But I still have a downward trend

You should consider getting gastric bypass or gastric sleeve surgery. ( no offence )
