Quinoa tabouleh salad. 1 cup of cooked quinoa 1 cup of chopped parsley A few chopped mint leaves 1 chopped small onion 2 chopped tomatoes 1 tsp olive oil Juice of 1 lemon Salt 1 tbsp pomegranate molasses (optional but delicious) Mix it all and enjoy a delicious salad :)

I like to add oats, chia, cinnamon, half a banana and a tsp of sugar free strawberry jam. I could have this breakfast every day!
