I love the moosewood cookbooks for vegetarian recipes. Easy and super flavourful. (I've borrowed them from the library before buying my own copy too)

I love berries with plain Greek yogurt and about 1/4 cup homemade granola. Berries make the yogurt sweet and the crunchy topping makes it feel even hardier. If I find I'm getting bored I try different fruit and a new granola recipe.

These are helpful. I live 30 from work and town and I bring my son to and from school with me.
