I make cashew milk. I put about a cup of nuts with about cup and a half of filtered water in my vitamix. I also put a a little vanilla and some hazelnut liquid stevia. Turns out good and is thick like milk. You may have to experiment with the amounts. I kinda wing it. You do need a strong blender for this.

I am finding out how much good stuff is out there to eat. I never had fruit with my meals, but I do now.

I know the feeling. I retired last year and I need to get healthy. My cholesterol was high so I need to focus on eating healthy and exercise more. I've been really trying since yesterday and so far so good. Maybe more people will chime in here and we can help each other. It can be so hard to change years of bad eating.
