Attend a few HIIT classes! Once you do a few its easy to kind of come up with your own routines. Don't be intimidated - there's ALWAYS a way to modify each exercise to any fitness level.

Also - try OCR's! I did 3 this year and its ADDICTIVE! Its your own way of keeping at it, with some sort of run or OCR coming up you'll want to stay in the gym.

Find or try a different gym!? I LOVE the one I go to and my Fitfam is the reason I'm there 5 days per week and have so much fun in our HIIT bootcamp. The ppl keep me pumped!
