Beef and pepper stir fry

Sometimes all you have the energy to make is air fryer chicken nuggets w leftover avocado and BBQ sauce out of a bottle.

Friday night I went to the new Mexican restaurant in the neighborhood. I left work in a down mood so it was a Great start to the weekend.

Big breakfast before errands and the gym: scrambled eggs+egg whites, oatmeal, and tea.

First time using an air fryer! Chicken chunks from Costco (they are better than I thought they’d be!)

Quick lunch: heated up some sliced turkey fro Costco, 2 eggs, and some celery (also from Costco, way too much celery).

Steak, scalloped potatoes, leftover Caesar salad.

I had rehearsal tonight so got home late. Dinner of odds and ends from the fridge. Breakfast was smoked salmon/cream cheese/toast. My goal was to have breakfast everyday this week and so far I’ve succeeded!

Went to see Les Miserables on tour and got some Mexican food after. Good day!

Trying to make more of an effort w. Breakfast. I bought a Costco-sized smoked salmon and I live alone so :smiley:

Work trip to Dallas. I’m originally from south Texas and was a bit nervous going back (left for a number of reasons). The food was great though! Managed Tex-mex 2 out of 3 nights and my heart is happy.

@Veta2018 and @acpgee I just did cilantro and Greek yogurt this time but Peruvian aji sauce is really good too! Definitely going in the rotation.

Had a little more time today than usual so got to play in the kitchen. For lunch I made pasta w a roasted honey it squash sauce (added silken tofu to thicken and add protein), with roasted broccoli and feta on top. Made some sweet potato soup for lunches, it’s been cold and wet here so I’ve been craving soup for a while.…

Friday night was a self-care night for sure. A much-needed manicure and some Vietnamese takeaway. It was cold and rainy here and the pho was a perfect choice.

Spaghetti and meatballs for dinner tonight. Made some cookie dough that I’ll bake tomorrow to take to a work gathering Wednesday.

lunch was a purchased Vietnamese shrimp salad which actually had a bit of spice (rare where I live) Dinner was eggs, bacon, and leftover biscuits.

Long weekend of bad anxiety but I managed to eat one good meal haha.

Chicken tostadas with homemade salsa (that tastes strongly of garlic even tho I didnt use much).

Quick dinner of leftovers because it’s late and I’m tired.

Realized it was 3pm and I haven t eaten anything yet. Last day of vacation for me, so back to waking up at 6am tomorrow.

Made some soup but overcooked the wontons :( the broth was really good though.

COVID diet was a pizza I bought and picked at for a week. First time catching it and I can’t imagine how much worse it was before the vaccines were available. I’m at high-risk for complications too.

Made some tostadas with chicken. Fixed an itch for Tex mex while living in the upper Midwest!

Still zero appetite but had to use up some things anyway.

First real meal in a few days (thanks COVID) of chicken, rice, and carrots.

Made some soup. Tested positive for COVID today :(

Sick today so spicy ramen. I’m supposed to play in a concert tomorrow so hopefully I’ll feel a bit better then.
