Your hormones are possibly all over the place plus the added weight could very well be water rention, food ij your stomach or even lack of a bowel movement. Give it 2 more days

Back load your calories so you're able to have a larger dinner and possibly a little something post dinner. Intermittent fasting helps with that. Also having a generous allotment of calories goes a long way. Not too sure how much you're working with or if your're actually eating enough to begin with.

I float back and forth between early workouts and evening workouts. I don't like to stick to a set way of doing things for too long. I like to switch up my algorithms from time to time. That said my preference would be smack bang in the middle of the day however that's not possible with my schedule. I will say morning…

It certainly won't hinder you. It sounds like you could probably lift at least x2 p/week more often than not so I would say go for it. Like the others have mentioned, you wont see massive strides in progression however as a bare minimum it'll do just fine.

Hmm. I never really do this but today I decided to do a particular set of exercises (along with my usual training program) everyday to observe incremental progression in real time. I'm doing it with a fellow friend on here so I'm very curious as to see how this turns out in the end.

It's nonsense. You're seriously gonna avoid a donut your entire life because you're scared you'll eat more than 1? Have a good life.
