The "you'll weigh X amount in 5 weeks" thing? Usually it estimates based on your total intake. So if you exceeded the estimated TDEE or BMR for MFP's estimate of you, it'll say that. The "weigh this in x weeks" isn't disable-able, as far as I know. Might be worth checking on the tech support forums?

You might consider looking into a Carb Cycled Ketogenic Diet. Anecdotally, I've had plenty of rides were I went stupidly hard after a carb heavy day and felt like I was back in regular ketosis the next day, where 100-200g or more of carbs should have seen me out.
