Leftover panko crusted chicken tenders from yesterday, Brussels sprouts w/pork belly, salad of spring mix, leftover slaw mix, cherry tomatoes and two types of olives spritzed w/olive oil. Primal Kitchen chili lime mayo for dipping the tenders in. They were a little dry after being reheated so needed it.

Leftover flounder heated up in butter and ponzu sauce w/salad of Mediterranean Mix greens, capers & cherry tomatoes spritzed with olive oil. Yesterday I had flounder with tzatziki sauce which worked well as the flounder is rather bland.

Pasta with squid tentacles and Chilean sea bass in a marinara sauce. This ended up being much better than I expected. It wasn't the original plan which involved fresh garlic, tomatoes & olive oil but we weren't able to get to the store so I had to make due with what was in the pantry.

New Years Day meal of air fried drumsticks, leftover mashed potatoes and black eyed peas (with pork belly) for good luck in 2023. For many years I always made black eyed peas on the first of January but in recent years I have done it less often but I thought we could use a bit of luck.

Tacos: ground turkey, Mexican spices, cabbage, cheese, guac, sour cream & salsa. Side of black beans. I am never too sure what to do with ground turkey as it's rather dry and bland but this worked as the guac and sour cream provided a little "moisture" and the spices some flavor.

Salad of romaine, cherry tomatoes, olives & sliced almonds dressed w/olive oil. Reverse seared steak and leftover mashed potatoes. We again marinated the steak in a triple smoked whisky prior to cooking. This time it had a much smoker flavor.

Quick and easy dinner as we were supposed to go out but the other couple bailed because the weather is so horrendous here. Tuna w/Primal Kitchen chili-lime mayo and capers with salad of romaine, tomatoes & olives spritzed with olive oil. Air fried "shake & bake" drumsticks, mashed potatoes & salad of tomatoes, olives & capers dressed with olive oil. Shake & bake mix was gluten free flour and curry powder. It has some dry spots but since I remove the skin it's not a problem. The important part is to impart flavor to the chicken.

Thanksgiving dinner: Cornish came hen, mashed potatoes, gravy, cranberry sauce and sautéed green beans with almonds. Desert was pumpkin pie gelato affogato using a coffee flavored cordial. For the poultry I used rosemary, sage, thyme and garlic on top because it wasn't thawed enough to stuff inside.
