I would use recipies that provide calorie info. If you make a recipe that bas 4 servings, you should be able to pretty accurately put 1/4 of it on your plate and know how many calories are there.

Too chemical-y for my taste. But then I do almost no artificial sweeteners. I want this to be about health, not just low-cal. There are plenty of healthy salad dressings out there with 40 or less calories and minimal sugars per 2 T serving.
