It’s so hot today and I had a massive headache, so I couldn’t face preparing my own food. Chicken & vegetable tray bake! Nice and simple - thighs, sweet potato, red & yellow pepper, red onion, plum tomatoes. Seasoned with olive oil, paprika, sumac, dill, parsley, garlic & onion powder. All on one tray at 180c for half an hour. Topped with feta, balsamic & sesame seeds.

Beef & chorizo burgers with chilli cheese and barbecue sauce. On top of a mixed leaf salad with feta, red onion, plum tomatoes, gherkins, sesame seeds, dried dill and dried chives. I can’t wait to make it again! On more carby days I’ll halve it and put it next to sweet potato fries.
