I eat this 99% of the time: - Smoothie (schinoussa sea vegetables, 1/2 banana, ground flax seed, frozen blueberries, frozen mix fruit, Barleans Greens or Hemp) - high fibre cereal with Almond Milk - organic coffee with honey & organic cream this runs me about 400 calories

You might want to find some recipes that don't require as much flour, but add in other ingredients such as flax meal or oat bran. Get french vanilla flavoured coffee, nix the creamer. It ain't real. Granted the coffee probably isn't entirely wholesome, but I don't think as bad as the creamer.

Just picked up a pair of Brooks Cascadia 7's yesterday so haven't had a chance to use them yet - can hardly wait! I've been using my Mizuno road shoes the last couple of weeks and they've been working pretty well too. Any of those brands you mentioned put out some good trail shoes - go with what feels good for you.
