With a history of diabetes in your family you really should get your blood sugar checked by a doctor just to make sure. And no, it isn't just you. I love carbs and have to work really hard to stay away from them as much as I can. I do agree the more carbs you eat the more you want and it is hard to break the cycle.

1200 calories is not a lot of calories. Scrambled eggs seem to fill me pretty full. Maybe you have set your goal too high at 1200. You can always up the calorie goal and go down later. If you are starting out hungry everyday, I don't know how long you will be able to hold out. Don't starve yourself when you don't have to.

If you are not hungry but need the calories, eat a tablespoon of peanut butter or eat a few nuts. The calories are high for small amounts but you get good fat and protein.

I do not use them. If I need some sweet, I use a little real sugar. Most any artificial sweetner I have tried either gives me a head ache, gives whatever a bitter taste or causes nausea. There is one diet cola I can drink but rarely do and another diet cola that makes me very sick which I never drink.
