I didn't put anything on it this time. It only sat in the box about 3-4 hours and was just about perfect in ripeness so it held together great. Today's lunch: Layer one: green chile sausage, almonds, colby jack cheese stick. mushrooms, carrots, and broccoli Layer two: mango, strawberry flowers, raspberries, gorgonzola, and spring mix. Serving it with honey red wine vinaigrette for the salad and a little dance for the broccoli/mushroom/carrots

Oh, I got a new bento in the mail yesterday! It looks HUGE compared to my bunny box. It is ~20% bigger but it looks like more. Now I have a box for weight lifting days though :blush: I'll have pictures soon!

I use dressing, I just didn't list it this morning as I wasn't sure which I wanted :). I'm leaning toward the honey red wine vinaigrette that I made earlier this week (added plus is it is here at work already ;) )

I agree although I suppose it depends on how you define "low carb". My boxes don't tend to have grain in them so most of my carbohydrate is coming from my fruits and veggies. That doesn't necessarily mean they are "low carb" but I'm going for nutrient dense, to tell the truth. Also, fruits and veggies are nom nom nom :wink:

Here is my box today: Layer one: Mango, broccoli, goat cheese, almonds, and some happy or defiant strawberries (first time using my picks!) Layer two: shrimp, corn, half a string cheese and cabbage/kale salad. Served with honey red wine vinaigrette. Today feels like a defiant, tongue-sticking-out strawberry kind of day!

I get the shrimp California rolls which are good. I think there is also a shrimp salad one I've seen. They also make spicy shrimp and crab Cali rolls as well as tofu/ vegetarian roll. I've heard that BPA is mainly in clear/translucent plastic too. Without microwaving/heating it isn't as big of a concern either. I vote hide it somewhere (whether in the bento or in my mouth as I'm making it ;) ) For instance, above I cut out egg white flowers and the rest of the yolk and scraps got mixed into my salad. Once I can really cook again I'm toying with the idea of saving the bits in a bag in the freezer and throwing them into meatballs…
