Count the veggies that go in as they come in their pure form. Thats the best way to do it. Best to over-estimate than under-estimate.

Yes it can happen. Fat loss is not linear. I have been at a stable weight for weeks then had a big night out on the drinks and the next day I am 6 pounds lighter. It happens sometimes. Its called the fat whoosh effect. Not exactly scientifically proven, but there has been many recollections of a similar experience.

Water weight most likely. Monitor and limit sodium and carbohydrate intake.

Not very calorie dense. However, it is extremely high in sodium. Use it sparingly and make sure you monitor your sodium intake. Too much sodium = too much water retention. I too love soya sauce. I use mixed herbs more often now to add flavour.

Chewing gum, diet coke, almonds, peanuts, cheese sticks (my favourite), small can of tuna, carrot sticks, celery sticks.

Nuts are very calorie dense. I snack on them but make sure you count.

When you feel hungry and are about to give in, go to bed. I do this and have a big hearty breakfast in the morning.

Protein is the bomb. Dont be worried about it. Carbs are what you need to concern yourself with. Make sure you hit your protein and fat goals. Doesnt matter if you go a little over on either of those.

There are sweet things you can have guilt free. The best option is sugar free jell-o. Its 20 calories for an entire bowl and tastes great! I eat a bowl every couple of days. On top of that, you can have coke zero and stuff if you are just after something sweet.
