FYI-I made these with cooked ground beef (96/4 lean from Walmart) and used Safeway medium Con Queso and used sliced jalapenos from Embasa in the same amounts in the recipe and it was delish! Calories 348/34Carbs/10Fat/29Protein. They came out to 9 Pts+ for all you Weight Watchers :bigsmile:

On occasion we use the light pepperoni. It has a lot of additives so we don't use it very often. I ate what I wanted yesterday and I had a tummy ache! It was fun and I have no regrets. However, instead of turning one day into weeks or months I am logging in today to track everything. Back on track and moving forward full speed! :) P.S. I won't be getting on the scale until Friday!

If you have a crock pot you can put them in with a jar of healthy salsa. Put the crock pot on low all day and by the time you get home you have an excellent meal. I do this for my family and the chicken is great served with some tortillas or taco shells. I usually add a side salad and you are good to go!

I love lifting weights! I have been lifting on and off for over 30 years. I actually had to count! I started at at 15 and I still look forward to lifting, pretty amazing actually! I do some cardio a few times a week and incorportate HIIT training.

After eating high carbs for a few days, then swithching over to lower carbs I usually do develop a headache. I always have a very hard time sleeping and feel restless also on day 1-3.
