I alternate days, so running one day, walking the next. That makes week 1 have 4 'workout' days / 3 'maintenance' days and vice versa for week 2.

IMO the burn calculators don't take into account your fitness level... When I first started with MFP and was running 4km or so the burn was supposed to be around 480 calories or so. I would support this guesstimate based on my heartrate. I'd get ravenously hungry afterwards and have to replace almost all the exercise carbs…

Salmon steaks or fillets are beautiful. Dry pan-fried (no oil, just a hot pan) with a sprinkle of ground fennel and maybe a squeeze of lemon juice = delicious. In general, fish cooks pretty quickly, and goes dry / flaky when it's well cooked.
