On the planks do you just hold it for the interval time (i.e. 20 sec)? Then I assume on crunches you would do as many as you could in the interval time......this sounds a lot like what Insanity is based on.

I'm not sure about this BUT I think if you put anything under strength it doesn't add the calories back. That's just to keep track of the reps and weight you use. Like I said, not sure about that......seem to remember reading it somewhere but not sure where.

I would keep the activity level the same and add the extra work. Like someone else said, if you don't do it one day then the numbers would still be correct. If you end up not losing then you could re-evaluate.
