^ I agree! I bought a ton of bento stuff years ago and never used it. Now I'm finishing university and my last semester is crazy -- tons of packed lunches/snacks in my future. Digging this thread for ideas! thanks guys. (your pictures are all amazing!)

Butternut squash makes a wicked dairy-free "cheese" sauce. You can of course always use real cheese in it... but it's great without: http://ohsheglows.com/2011/10/03/butternut-squash-mac-n-cheeze/ I also like to mash it (kind of like mashed potatoes or sweet potatoes) after roasting and scooping out the flesh; this mash is…

I have the same problem! Lunch ideas are my weak point., so this is more of a bump. lol But here are some things that work for me: I make a tofu-based caesar salad dressing (like a billion recipes for this online) and assemble a salad with romaine, cucumber, croutons (homemade toasted bread in the oven with a little oil,…

I read somewhere that genuine HUNGER is like a biological process that causes your intestines to like clench up trying to find extra nutrients in there somewhere because your body really needs it? Idk, but whenever I get like that, I check out my macros and see what's up. Maybe you need to eat something different -- dat…

This probably goes without saying, but you can definitely check out Oh She Glows since most of her recipes are either GF or allow to GF substitutions. I think Edible Perspective also has a lot of GF recipes? I'm sure a quick google search for those blogs will yield the actual websites fairly easily. If you have GF oats you…

@pocket -- POTATOES in a tofu scramble. That's a very good idea. Would it translate well to breakfast burrito, do you think? I've only had tofu scrambles while out to brunch and such and sometimes I find them too salsa-y so it's a nice idea to try myself. I have a quarter block of extra firm in the fridge so maybe I'll try…

I would check for excess moisture in your fridge (specifically where these veggies are kept). I don't keep my veggies in the veggie drawer specifically because I find 1) It's usually a bit warmer in there than the rest of the fridge and things don't keep as long, and 2) moisture can build up making it humid and encouraging…

The recipe TOTAL is what you're going for -- so put everything you put in the recipe (ie all five carrots) and then when you enter the amount of servings you got from the recipe, it will automatically divide the recipe total to equal one serving. make sense? :D

Lentils are a GREAT sub for ground meat sort of dishes! I think lentil tacos are great (made some last night) and very simple -- you can even cut down time by adding a taco seasoning packet and some salsa for the flavoured "sauce" instead of making your own. Just add your seasonings (I tend to add a bit of ketchup or…

I'm very partial to a simple sweet/sour vinaigrette dressing which is usually about a tablespoon of sugar or honey (flavourful honey works best of all) and maybe a third to half cup of white vinegar -- I think rice vinegar or sherry or something like that would probably work fine but I like to be able to taste the honey.…

I sauteed a bunch of kale and spinach with garlic and topped with a poached egg. Toast or crackers or somesuch would probably be good with that but I definitely didn't need it. (PS poaching eggs is super easy and takes about 5 minutes! try googling different methods.)

This probably is already known to you but blogs like fatfreevegan and ohsheglows have really great vegan recipe databases, I would suggest checking there if you haven't already. My favourite breakfast is based off of the OSG vegan overnight oats recipe and I think my version (oats/almond milk/chia/bitof sugar & cinnamon)…

My better half and I usually spend about 50 dollars per two weeks of groceries for the both of us -- it's totally doable! (We eat mostly vegetarian but some meat for him gets in there too. Not sure of your dietary prefs.) I think the key for me is a lot of grocery stores have their flyers online, and here they get released…

I think fatfreevegan has a bunch of casseroles on her blog too. http://blog.fatfreevegan.com/tag/casserole Oh She Glows is great though -- will second that recommendation! :)
