If it was straight up fresh fruit and veggies (no dip, no frying them, just eating fresh) I don't bother to count them. They're my "freebies" because I know the health benefits of them are WAY more important than the few calories I get from eating them.

I too am losing very slowly, but at least the scale is going down now, instead of up like it used to. It helps to think that before you were probably slowly GAINING weight, and now not only have you stopped the weight gain, you're actually moving backwards and losing, even if slowly.

Come up with some mini goals and rewards. Example for me: 5 pounds down = get my teeth whitened 10 pounds down = buy a new bathing suit It really helps get me motivated because I refuse to let myself do any of these things before I make my goal and I want that new bathing suit before summer ends!

I am 5' 5'' - I have weighed between 98 and 140 pounds when at this height. Speaking as someone who has been both slightly underweight and slightly overweight, I found that my ideal weight was 120 pounds.

Personally, I love my scale. Gives me motivation! And I know that it's not perfect, weight fluctuates, but if I'm moving between 150-155 instead of 160-165, I know I've lost weight :)

Juice - I used to drink about 8 glasses a day, but now I've replaced about 6 of those with water. Can't quite give it all up, but I've cut out a lot of calories!

Have you been updating your weight on mfp whenever you weight yourself? Because it just subtracts from whatever you last said you weighed. Also, this one is obvious, but double check that your settings haven't been changed to gain weight somehow....
