  • Not real pizza, but if you like eggplant you can make mini "pizzas" I usually cut the eggplant into about 1/2 circles, bake until soft-ish and then spread sauce cheese and whatever other topping you like on top. Stick it under the broiler for a few minutes and you're good to go. Tastes great! Don't even miss the crust.
