Weight training is a good idea, but I focus more on cardio. I also swim 5 times a week (unless I'm working out of town) which is great for maintaining already existing muscle mass.

You should probably consider seeing your doctor, or at least a nutritionist. If I ate that lower number of calories, I wouldn't be able to think correctly, let alone exercise. I have around 1200 calories just for my dinner.

I usually eat at least 40% of my exercise calories back. I got fat because I enjoy eating. If exercise earns me calories to eat, then I'm going to do it. Besides, if you exercise and don't eat some back, you usually end up netting below the recommended allowance. Feeling hungry, tired and depleted of energy sucks.

As mentioned above, beer does account for quite a lot of calories. unfortunately, it is one of the sacrifices worth thinking about. I wouldn't say easy, but it depends on the individual. I go to the gym and swim 5 times a week, I work my butt off to obtain my weight loss, but if all I did was eat at a caloric deficit, then yeah, I suppose it would be pretty easy.

You get to eat more. If you're happy surviving on 1300 calories, then don't eat them back. I can eat 1500 calories on just dinner, which makes exercise essential for me. I'd be miserable as sin if I had to survive on 1300 calories a day. Or anything under 1800 calories for that matter.
