Mine is really simple. Puree two cans of black beans with one can Rotel tomatoes. Add another can of black beans, don't puree. Add cumin to taste. (Recipe says a tablespoon, but I think that's too much). Heat and serve. It's good with avocado, sour cream, chips, green onions, diced tomatoes, cheese, or nothing.

Yes, but I have 4 kids. I don't want to cook two pots of rice- one for me, one for them. Once I add water, weighing it isn't as accurate, unless I eat all that is prepared.

Hmmm... I was hoping for some good ideas! It is just too hot to have soup here. Yesterday we had baked potatos with cottage cheese instead of butter and sourcream. (try it, it is surprizingly good) And diced ham and broccoli and a salad. And it was pretty surprizingly low calorie. I was so satisfied.
