I understand why you love your dressing: you could still use it, perhaps the 1Tblspon amount, and add a bit of your favorite vinegar (red wine, or tarragon) do help coat the salad and spread your ranch further.

I think it might have something to do with the fact that your body could go into starvation mode (1200 is very low amount of calories) and hang on to its weight to protect you; exercise helps bring everything up so your body can let go. Have you read Tara Parker Pope's piece on weight loss and exercise?

I too find that including some kind of milk product (I use dairy: milk or plain yogurt) mixed with a whole grain cereal and/or fruit, I stay fuller longer. Or if I add warmed milk to my coffee, I feel fuller longer. I always eat a mid morning fruit, too.
