Thanks, all! Hope you like it, it's one of my go-to's when I want to feel like I'm cheating - but it's healthy! You can sub any fruit for the peach, too, I tend to use whatever is seasonal.

It is really filling. For a few more calories, you can use the other flatout bread flavors instead - there is one with flax, which would be good as well!

Cindy - the secret to getting the rice texture is to microwave the cauliflower without any added liquid. You could add sauce after cooking. :)

I love rice, too, white and brown, but this is also great if you want a higher-calorie topping and a lower calorie base (like a creamy chicken curry with coconut milk, the rice would just put me waaaaay too high for my goals.)
