Soaking beans makes the texture better when cooked. The nice thing about pintos is they cook up soft. I love them. We use a pressure cooker for 10 minutes (add a teaspoon of oil), then add seasonings and veggies for another 5 or 10.

When I started trying to drink more, I made weak, black tea. It's enough flavor to get over the plain water hurdle. This year we have a frig with an icemaker, and I'm finding it very easy to drink cool water. I have 1-2 glasses of protein drink that I count, and 1 coffee in the morning. Don't drink juice anymore, too…

The speed of your loss is amazing. I started MFP Jan 2012 and have lost 14 lbs. But that's over 2x faster compared to last year. You look great!

If I were king, I would ban Penn State from any football, not competitive, not recreational. I'd tear down the stadium and make it a dog park.

Ezekiel is better nutrition than home made. That's because I don't know how to sprout grains and grind them. I use the loaf very efficiently though, taking a slice at a time from the freezer.

Think outside of sandwich. You're going to end up with salads or reheatable foods. For a light carb load, I use Ry Krisp. Often an open faced sandwich. Ingredients packed separately.

Cut the tops off and lay on a cookie sheet to flash freeze. Then bag up and use for smoothies.

Home-made falafel, hummus, and salad. The family will have pitas. If I can manage it I'll buy tahini to make the sauce.

You should get a book or two for him. My fav is Blood Sugar 101. There are diabetic classes he can take. I hope to get enrolled with Kaiser on that. You are there to help, but he needs the basic knowledge.

What helped for me was a bad blood sugar reading, March 2011. I don't want to go blind or lose my toes. I was stubbornly 50lbs overweight, but until the test results, my head did not get wrapped around "get healthy or die" kind of urgency. I tried WW but MFP is far better.

I have the 30 day with the packets of vitamins. It is so easy to take them. The only except is that I augment the evening's packet with 1000 vit C, 5000 vit D and kelp. I haven't wasted anything. The only product I don't enjoy is the powder mix that is like apple vinegar, just issues with the taste of it.

I've found that machines tell me that I've burned 100 cals per mile on average, if I'm running. 5'4" 140 to 170lbs over time. Bigger people get more cals credited.

I'm in the vicinity of this age group, though I rarely admit it, LOL. Would like more friends to keep pushing me. I'm on a roll right now, getting in shape for a mini triathlon and a short backpack trip. To avoid embarrassment there, I'm working out very hard.

I would not imagine stir fry would freeze well. But you could repackage chopped and frozen veggies into dinner size bags to pull out. Time saved cleaning and chopping. A little tofu, and even less rice and you have a great meal.
