Absolutely Daiya. You can get it in bulk from Whole Foods if you ask, as well. I just made pizza tonight and used a tofu ricotta/nutritional yeast recipe, but Daiya is super super tasty.

I diagnose/treat sleep disorders SO I haven't much of a choice. Day shift is the holy grail of sleep medicine. I'll go to grad school (clinical psychology) this fall, though, and hopefully I'll be able to do some research about the health of night shift workers.

I wouldn't actually say that it's harder. I lost 77 lbs when I went from vegetarian to vegan.
