Because it takes too long to let the speed adjust that way. What they are doing is HIIT - high intensity interval training: short bursts of intense exertion. If the treadmill is running the whole time you can get on and go "all out" right away, then rest a minute, and so forth.

5'11 167 lbs 20% bf size 10 or so... Don't really care about the numbers but want to build strong muscles and eat healthy. My SW was 188 (chocolate consumption got a little out of hand, lol!)

Good for you, just eating 2 slices and a few bread sticks, - I am an "all or none" type eater, so eating just a slice would throw me into full blown "must eat entire pizza" mode, lol!
