I think if you can get them at the 6-7 hr mark, then they would be okay. I tried overnight and by 8 hours it was a little too mushy. Each crockpot is different though....a small batch might be worth a try. I do it in the evening and then throw it in a tupperware container in the fridge for the next few mornings.
