Before I got my food scale, I was actually eating about 1/2 a serving pasta every time instead of a full serving. I was super excited when I found out I could actually eat more than I had been.

Huh. You really do seem to be doing the right things, and you're eating an appropriate amount of calories based on your stats. Do you measure yourself? I'm wondering if you're losing inches, and just maintaining your weight.

I honestly don't see anything "wrong" with your diary. How tall are you, and what's your current weight? How long have you been trying to lose 7lbs? What types of exercise do you do? Are you positive that you are logging absolutely everything, and doing it accurately?

Stick with the pre-set sodium goal. I think you need to be getting more protein though, especially if your trainer is putting you through weight training.
