I love seafood in general, but I cook with shrimp a lot because it is so versatile. Shrimp in red curry sauce (with coconut milk) with tons of vegetables is one of my go to favorites. I eat it with rice, but have also done it plain or over zucchini noodles.

I put leftover sweet potatoes in a breakfast smoothie with protein powder and milk. I think that would be a good use for canned sweet potatoes also. Or mix into Greek yogurt for a sweet potato "mousse". that would be good with some chopped nuts on top.

By two days ago, do you mean that you lifted for two days in a row? If you are just starting out, it's probably best to give yourself 1-2 rest days in between training sessions. Rest days do not have to be spent idle. In fact, moving around will definitely help with the soreness. Try some stretching or an easy yoga video.…

I love Nicoise salad. It is a favorite of mine to make when my hubby is out of town and I am cooking for one. Here I used canned tuna, which is no substitute for a perfectly seared rare tuna steak, but it is still quite tasty. I usually make it with a homemade Dijon vinegarette.
