I usually walk a mile at 3.5 mph and 3.5 incline, then I run at 6 mph/1 incline for 1-2 miles, then i alternate running and walking. Usually end up doing an hour.

People can lose weight eating that much because their TDEE is higher than 1600. I lose about a pound a week eating 2000 calories if I'm working out 5x a week because my TDEE is around 2500 when I work out that much.

The heaviest i've ever gone is 4 reps 50 pounds I usually do 10 reps at 20 or 30 pounds though. I know I can probably go a lot heavier, but I only started barbell squats a few months ago and I'm focusing on perfecting my form before I increase the weight

Nothing you've written in this post (or subsequent posts) suggests that your husband is naturally thin . . . just that he has a higher TDEE than you and eats to meet that TDEE - not more, not less. If he did force himself to eat above that, he would gain weight.
