I also put in a little red onion and corn sometimes. The black bean burritos are filling and easy to cook up if you are in a hurry! Great idea about preparing them ahead of time!

80 lbs is my overall goal. I love cooked carrots, raw red bel peppers and green grapes. OH and I think I could live on blackberries or strawberries with cool whip..YUM!
