Weekly targets have worked well for me. I have averaged one or two days per week of higher calories and one or two days per week of lower calories. It has made it easier for things like birthdays, holidays, vacation days or any other celebrations that normally result in higher calories.

Fats in your diet do not make you fat unless you are eating too many calories. It would be to your benefit to not reduce your fat intake any more than you already are, you are not doing anything wrong. Getting less than 55 percent carbohydrates is not bad for you.
