My husband calls them "pepper boats" Take red or yellow bell peppers and cut them into quarters. Remove stems and seeds. BBQ on the grill with BBQ grilling spice or Mansmiths (my fav) or any spice you prefer. Add reduced fat grated cheddar cheese (any kind would work though) and let it melt. SERVE and ENJOY!
