  • Mediterranean Spaghetti Squash Bake and shred the spaghetti squash. Sautee 1/2 chopped onion and 1 chopped red pepper in a bit of olive oil. Toss together with 3-5 chopped tomatoes, a large handful of chopped fresh basil, 1/2 cup sliced black olives. 2/3 cup of crumbled feta cheese, salt and pepper.
