I love quinoa....we always have it stocked in our cupboard as a healthier alternative to rice. Black beans and chick peas are also staples at my house as I try to go meatless a few days a week.

I'll cook up the quinoa plain (usually just one serving) and roast broccoli and tomato in the oven at the same time. When everything is done, I mix it up together, add about an 1/8 cup of feta and some balsamic vinegar. Really good and filling.
