My biggest concern right now is eating healthy on a very tight budget. Yes, I could just eat less of the not-as-healthy food, but I don't want to do that. I feel much better when I cook and eat fresh vegetables and prepare my own lunches and dinners versus fixing packages products or getting take out. That gets expensive.

Not if you have a large amount to lose. It should slow down soon enough and average out. If it doesn't, you'll need to reevaluate your goal setting and your calorie limit.

4lbs over night is a natural fluctuation. You're going to see that every time you eat, with or without surgery. How long did it take you to lose the 23lbs? Being active enough to get 22000 steps is quite impressive. Surely that's shown you that you can do this.

There are lots of ready made granolas, like the Nature Valley I mentioned. I got it because I struggle with protein, and it is made with protein powders. You can find a ton of recipes for granola online. I used a basic recipe from Pinterest then added dried fruits, nuts, and seeds.
