For veggie lasagna I just use plain marinara. I'll even beef up a store bought marinara by added sauted bell peppers & mushrooms... Sometimes instead of using lasagna noodles I'll layer sliced eggplant. I don't know exactly how I plan on making it this week, but it'll probably have ricotta cheese, zucchini, and eggplant in…
