I only weigh myself first thing in the morning, completely naked, after I've peed and pooped. If I don't poop, I won't weigh myself.

I use vanilla almond milk, which is super low calorie, and splenda, which maybe isn't so good for you, but neither is sugar

I have that same problem, it's so difficult. Even after losing a fair amount of weight I look in the mirror and don't see much of a difference. Like if I look like this in the mirror NOW, what did I look like 20lbs ago?

5'3" - Started 154lbs in size 8 -Current 130-135 in size 6 (very loose, could probably fit into size 4)
