Water retention after general anesthesia is very common. I had major ankle/foot surgery and spent a week after, discharging tons of water. I was in a manual wheelchair for 3 months, pushing myself everywhere - though I would lose weight, but the doctors told me it doesn't burn that much. But it stopped my gaining.

The Scosche Rhythm plus HRM- works just as well as a cheststrap - it's using multi-color LEDs on the upper arm. I would not trust a wristwatch style HRM. However HRM's are a terrible way to estimate calories - might as well throw some dice.

I use his web app, that averages the total non-consistent weight loss into a more meaningful graph. E>g this morning I weighted 5 lbs more than Friday - I see a spike on the graph and a re-assuring curve - that says- don't worry

I walk on non workout days- last week did 1.5 hours in a park with ravines - so I climbed several hundred feet of hills also. I felt no need for food - just water.

The 8 glasses is an arbitrary myth - three years ago I gave it up. I drink two glasses of water first thing in the morning - thirsty or not. Otherwise I drink when thirsty. An exception is if its hot outside and I'm going for an exercise walk _ I drink as much as I can first.

I used to eat what I thought was too much cheese - but when I went keto 9 months ago, I ended up eating more. I was losing at 2lbs a week for several months - no problems. I'm less carefull in my eating now, still consuming lots of cheese and losing a lb a week.
