I'm no expert but maybe leaner meats would help. Try turkey and chicken breast and some fish. It seems like you are getting a lot of fat from some of the meats in your diet. Hope that helps.

Don't sweat the small stuff...really. A few things are bound to go wrong but what's important is that at the end of the day you will be married. I got married 2 years ago and am so glad I was able to let the little things go so I could truly enjoy the important parts of the day. Congrats!

You aren't eating enough. You have too many calories left over on the days I looked at. Also you should make sure to eat a quality breakfast in the morning to get your metabolism fired up- red bull and starbucks just don't cut it. Good luck.

I make mine in the slow cooker (if you have one). Just put a little bit of water to cover the bottom of the pan and cook on low for a few hours. I use a meat thermometer to make sure it's done. Let it rest outside the pan for ~10 minutes before you slice it to let the juices redistribute. Good luck.

I'm catholic too so I know what you mean. On of my favorites is veggie fajitas: sliced onions, bell peppers, corn, black olives, and canned black beans (rinsed and drained). Just sautee up in a tsp of olive oil and serve with corn tortillas.
