My husband was just like that at first. Cook a healthy/lean protein and potatoes and/or pasta. Cook veggies or make a fresh salad to go with your protein. If you spend time with seasonings you may be able to, over years, get your guy on board with you. Best wishes!

I always have a Tervis full of water and ice. Ice really improves my ability to consume more plus your body burns calories trying to warm it up. Sometimes I add fresh grapefruit or lemon to help with flavor.

Do not skip snacks between meals, this will hold you over. Add a large amount raw veggies to your meals like carrots, celery, etc. These fillers help a lot.

I've always done weights because I do not care for cardio, but you must mix some in. When I lift I make sure to put in jumping jacks or abs to keep my heart rate up during the lifting sessions.
