  • Most supermarkets have ground flaxseed (meal) in the flour/baking section or in the organic foods section.
  • CORRECTION: Make sure you use FLAXSEED MEAL. I forget to specify that in the recipe.
  • Flaxseed meal (ground). Sorry I left that point out of the recipe.
  • No need to butter the mug or use vegetable oil spray. The little bit of olive oil or butter you use in the recipe is enough to keep the muffin from sticking.
  • Glad you like it. After eating WASA Crisp as my "bread" for nearly a year, Mug Bread is a really nice change. I made larger size one (same recipe, same calories) for lunch and had a fantastic turkey & tomato sandwich. It was really good. Like everything, you have to make it part of your total diet plan.

  • Some people use almond flower. You can also add 1 tsp of cocoa instead of the cinnamon.
  • In a smaller mug, it might rise above the rim, but it doesn't spill. When the microwave is done it sinks back into the mug. It's ALIVE!
  • Here's another good tip. Since measuring takes up most of the time, I prepare 5-6 zip bags with all the dry ingredients mixed up and keep them in the fridge so all I have to do is to dump it in a cup or bowl and add the wet ingredients.
  • Fantastic. Yes, letting it totally cool makes it very easy to slice and it's nice and firm.
  • I'm sure you can use a packet of sugar (teaspoon) or any other sweetener you like. Or omit it completely. I"ve also made a more savory mug bread by omitting the cinnamon and adding onion powder and other spices. Came out great too. But since I'm diabetic, I leave the cinnamon in because it's good to lower blood sugar.…
  • I don't think you should eat more to make up for the calories you've burned during exercise. If you're close to you goal, you can up your total calories to a higher level, but don't use exercise as an excuse to eat more. I think it's a slippery slope. JMHO.
