Eat more. I ate 3000 calories a day to gain. Full fat dairy was very helpful (unless you are vegan). And yeah you may have to drop the boot camps.

Most Universities have really nice gyms. Use it. Try to pick the healthy things as often as possible but don't obsess about it. Don't drink too much. Don't snack mindlessly while studying. Walk to all your classes.

I'm a weight lifer first, mountain biker second. I do a modified version of Strong Lifts, so deadlifts and squat. I don't think many people can argue with deadlifts and squats.

The only reason I'm thinking about the 650b is the Genius doesn't come in a 26 and I'm not sure I want a 29. I have demoed the 650 but I was short on time. I do want to demo the 29. I've never ridden one. I just suck at switch backs as it is... I guess the draw back of the 650s is that they are hard to find tires and tubes…

If you burn say, 2000 calories a day without exercise. Then you eat 2000 calories a day. Then you exercise and burn an extra 300 calories you are creating a 300 calorie deficit and could therefore lose weight.
