  • Tofu is a soy-based meat alternative. I like it best "extra firm" and baked or pan-fried. You can make veggie dips and desserts out of the softer varieties.

  • Homemade zucchini chips!!! Slice zucchini extremely thin (about thickness of a quarter). Spray pan with nonstick spray such as Smart Balance Omega. Lay out zucchini slices, sprinkle with a SMALL amount of salt and another quick spray of oil. Bake at 225 for about 1.5 hours. DELICIOUS.
