Check out www.againstallgrain.com She has some bread recipes that I haven't tried yet, but people rave about! She uses nut and coconut flours. I've tried some of her non-bread recipes and she really knows her way around a grain-free kitchen

Are you going to have access to a microwave? You could always pre cook a scramble with eggs and veggies and heat it up, or just take along some hardboiled eggs and some meats you like cold (I love cold bacon and cold sausage for breakfast)
